Recipe for Asparagus, Radish, and Feta Salad

 
 
 

 

Ingredients (for 4 people): 

Preparation : 

  • Prepare the asparagus:

Wash and slightly peel the base of the asparagus.

Boil them in a pot of salted water for 3 to 4 minutes, then immediately transfer them into a bowl of ice water to set their color and retain their crunch. Drain and cut them into 3 to 4 cm pieces.

  • Prepare the other ingredients:

Wash and finely slice the radishes into thin rounds.

Crumble the feta.

  • Seasoning:

In a small bowl, mix the pine nut oil, lemon juice, Kampot pepper, and a pinch of fleur de sel.

  • Assembly:

Place the asparagus and radishes in a salad bowl.

Sprinkle with crumbled feta.

Pour the dressing and toss gently.

Add a few basil or mint leaves for a fresh touch and, if desired, some toasted pine nuts for crunch.

  • Serving:

Arrange the asparagus and feta on a bed of fresh salad greens and serve immediately.
